Baking christmas cookies is a time-honoured German tradition – so all of us German expats here in Dublin got together on Sunday to bake christmas cookies together. Here are my favourite recipes:
Almond cookies
Mix 125g butter, 500g sugar and 4 eggs with an electric mixer. Add 500g flour, 125g ground almonds, a teaspoon of vanilla essence and a teaspoon of baking powder. Put small lumps on a baking tray and bake at 170ºC for 8-10 minutes.
Makes one hell of a lot.
Nut triangles
For the base, mix 125g butter, 1 egg, 65g sugar and half a teaspoon of vanilla essence. Add 250g flour. Spread thinly on a baking tray.
For the topping, melt 150g butter in a saucepan. Add 200g sugar, 400g ground hazelnuts, a teaspoon of vanilla essence and 5 tablespoons of water and stir thoroughly. Spread evenly on the base.
Bake at 200ºC for 15 minutes. Cut into triangles while hot, then let cool down. Cover one edge of each triangle with chocolate frosting.
Makes one large baking tray.
