Tres Leches Cake + pancakes

Pastel de Tres Leches

I got this recipe off the net and converted it to metric (silly americans with their silly units … what’s “a cup of flour"?) Tres Leches is a regular cake drenched in a mixture of three different kinds of milk. It is very moist and sweet.

  • 170g flour
  • 1 teaspoon baking powder
  • 115g butter
  • 110g sugar
  • 5 eggs
  • 1 teaspoons of vanilla extract, or a satchel of vanilla sugar
  • 250ml milk
  • 200ml sweetened condensed milk
  • 200ml evaporated milk
  • 8cl liqeur, for example kahlua
  • For the topping: 250ml whipping cream, 100g sugar

Sift flour and baking powder. Beat butter with sugar, then add eggs, vanilla extract and flour. Pour into a rectangular pan and bake at 180ÂșC for 30 minutes. Let it cool.

When the cake has cooled down, mix the three kinds of milk (regular milk, condensed milk and evaporated milk) and optionally the liqueur. Put the cake on a grate over the (cleaned!) bowl. Pour the milk mixture over the cake. Collect what drips into the pan and pour back on the cake. Repeat until the cake is completely drenched.

For serving, whip the cream with the sugar and spread over the cake.

The cake must be refrigerated on account of the milk it contains.

Buttermilk pancakes

This is Krista’s recipe.

  • 250ml buttermilk
  • 100g flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • 1 egg

Bake in an anti-stick pan with a bit of butter. Put in some blueberries or raspberries if you want.
